1 This Indian Standard (Part 13) was originally published in 1988 and was identical adoption of ISO 5553 : 1980 ‘Meat and Meat Products — Detection of Polyphosphate (reference method)’ under dual numbering. This first revision of the standard has been undertaken to harmonize with the latest version of ISO 5553 under development as document ISO/FDIS 5553 ‘Meat and meat products — Detection of condensed phosphates’ and is an identical adoption of the ISO document under dual numbering.
2 This document specifies a method for the detection of linear condensed phosphates in meat and meat products by thin layer chromatographic separation. This document only applies to the detection of added condensed phosphates that are still present in the sample at the time of investigation, because condensed phosphates are gradually hydrolyzed by enzymes present in meat or meat products and during heat treatment of meat or meat products.
