1 The standard was originally published in 1994. The standard has been taken up for revision to bring it in line with the current industrial practices and technology. In this revision, the following major modifications have been incorporated: i) The scope of the standard has been modified to incorporate all forms of dehydrated food including dehydrated powder; ii) The guidelines for water supply have been modified to ensure the conformance to the Indian Standard on potable water as per IS 10500; iii) The requirements of the walls and ceilings, material handling, general hygiene have been updated; iv) The employee hygiene requirements are updated and described as a part of “Quality Control Programme”; v) The check list for hygiene/sanitation and safety measures of the dehydration unit has been updated.
