BIS develops Indian Standard for Drinks Based on Fermented Milk

Drinks like lassi, chaach, and buttermilk have long been an important part of Indian diets, valued for their refreshing taste and rich nutritional benefits. These fermented milk-based beverages are deeply rooted in our tradition and are widely enjoyed across urban and rural landscapes alike. Bureau of Indian Standards had developed Indian Standard IS 18678 on drinks based on fermented milk to assist the manufacturers in the production and quality control of these beverages. Several variants of drinks based on fermented milk are available in market, which are popularly known as Lassi, Chhaach, buttermilk, etc. These are not only hydrating but also rich in lactic acid starter cultures, which aid in digestion and boost overall health.

Indian Standard IS 18678 specifies the requirements and methods of testing to ensure the consistent quality of drinks based on fermented milk. Major aspects of this Indian Standard include:

1. Product Composition
Drinks based on fermented milk are composite milk products, obtained by mixing fermented milk (Dahi or Yogurt) with potable water with or without the addition of whey, other milk and milk products, other permitted non-dairy ingredients and flavours. Drinks based on fermented milk may be prepared with or without heat treatment and are popularly known as Lassi, Chhaach or buttermilk, etc.

2. Nutritional Benefits
Drinks based on fermented milk are packed with numerous nutritional benefits that contribute to overall health and well-being. They are rich in lactic acid bacteria and may also contain probiotics and prebiotics, which support gut health and digestion, helping to maintain a healthy balance of beneficial bacteria in the digestive system. These beverages also contain high levels of essential nutrients, such as calcium, protein, and vitamins, which are vital for bone health, muscle function, and overall vitality.
